IT'S NEARLY HERE.

Seems just the other day we were all complaining desperately about the heat. Now as winter slowly glides in, chefs everywhere are enjoying some respite from the infernal heat. It's still astounding in this day and age of over the top, at times nonsensical, OH&S rulings by the Health Department that kitchen ventilation is so far down the list of priorities. Well, it doesn't even make it onto the list does it? As mornings get cooler, I notice the chefs and kitchen folk we see all look a hell of a lot more relaxed and happy and soon we'll all be complaining about the cold.
